Cheesecake Stuffed Strawberries



So easy and so yummy!!! This took me a matter of minutes to make.

If you like watching youtube videos, this is the one I originally watched to teach me how to make them: How to make cheesecake stuffed strawberries

1. Cut off top of strawberry, core out center, and cut off bottom tip.

 2. Make cheesecake filling.
There a few different recipes out there so it truly depends on your personal taste. This how I made mine:
8oz softened low fat cream cheese
1/2 c. powdered sugar
1 tsp. vanilla

HOWEVER this is more like a cream cheese frosting and is sweet. If you want more of a blander cream cheese flavor that will complement the tangy/sour strawberry cut the powdered sugar down to 3-4 tablespoons.

3. You can put the filling in a pastry bag or a Ziplock bag-just cut off the tip and fill the strawberry. You don't need any previous experience with decorating to do this-the filling comes right out and nicely fills the strawberry.

I've been anxious to try Duncan Hines Frosting Creations-so I did!!
I thought adding 'Strawberry Shortcake' flavoring to the cheesecake filling would be FAB!!


I added an entire packet and it was sweet. I would recommend starting out by adding only half and increase from there. This is also affected by how much powdered sugar you've added to original base-it's all up to your taste preferences so adjust as necessary!!

Many recipes top off strawberry with graham cracker crumbs. I decided to go with Oreos!!

I also added a little piece of graham cracker for a cute look!!

Flower Pot Dessert!

I found this post on Pinterest. I LOVE it! I am definitely making it for my mom this Mother's Day. I think my favorite part is the straw that goes through the middle so you can put a REAL flower on top.
It's just a pictorial but I think you can figure it out without any words.

 I am going to add some decorations to my pot. Here is a tutorial on how to do it.

Hungry Girl-that's me!!

Have you ever visited Hungry Girl ?

She is the ultimate in low fat/low calorie alternatives. She has come so far in the past 8yrs since I first saw her website. She has cook books with collections of her recipes, her own line of food, and even a show on the food network.

I am a late night snacker and it's always hard to find a decent low cal, easy snack late at night when you want something to munch on. I came across one of her low cal 'dessert in a mug' recipes Mississippi Mug Recipe

Mississippi Mug Pie
PER SERVING (entire recipe): 223 calories, 5g fat, 588mg sodium, 45.5g carbs, 2.75g fiber, 19g sugars, 6.5g protein -- PointsPlus® value 7*

Prep: 10 minutes
Cook: 5 minutes

Ingredients:

3 level tbsp. moist-style devil's food cake mix (not packed)
1 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
One 25-calorie packet hot cocoa mix (like Swiss Miss Diet or NestlĂ© Fat Free)
1 tsp. mini semi-sweet chocolate chips
One 60-calorie sugar-free chocolate pudding snack (like the kind by Jell-O), divided
Optional: Fat Free Reddi-wip
Directions:

Spray a large microwave-safe mug with nonstick spray. Add cake mix, egg substitute, cocoa mix, and 2 tbsp. water. Mix well.

Add chocolate chips and about one-third of the pudding to the mug, and stir gently to combine. Microwave for 1 minute.

Fluff with a fork, and then gently mix in the remaining pudding.

Microwave for 1 more minute.

Let cool slightly. Top with Reddi-wip, if you like, and dig in!
